Another delightful feast was prepared with the help of some amazing friends.  We grilled shish kabobs with peach, chicken, and onion and we painted a sweet/spicy sauce on them using a rosemary brush.  For our sides we had a fresh salad,  Italian pasta salad, garden pasta salad, and chips!  Of course, to finish our meal we had s’mores with giant marshmallows!  Thank you Kurt, Paul, Alice, Miowa, and Alex for the delicious meal.

Tonight I cooked myself some fajitas and Spanish rice. Mmmmm.

Tonight I cooked grilled eggplant and tomatoes with tortellini and red sauce. Yum!

Last night I had some friends over for grilled portobello burgers topped with red peppers, potatoes with onions and green peppers, and blackberries, pineapple, grapes, and strawberries…all washed down with sun tea. Mmmm mmm mmmmmm!

My mom came to visit me yesterday and she brought tons of food for me.  Last night for dinner, we cooked fajitas over the miniature grill.  They were so delicious.

I had the pleasure of enjoying a lunch picnic AND a dinner picnic. I have the best friends!

My best friend Evan brought me a sandwich, Dr. P, chips, and a giant bag of M&Ms for lunch. Mmmmmm.

Then, Brian, Doug, Josh, and Lukas brought me fried chicken, pasta salad, broccoli salad, blueberry muffins, doughnuts, and raspberry lemonade!  What a feast!

I love my friends!

Today, a group of guys biked all the way from 86th and College with a tomato plant in a backpack.  This was an amazing gift since our tomatoes have been dying.  Hopefully, this little guy will get enough shade after we put up our umbrella for the tomatoes. Long live tomato plant!

Last night was wonderful.  The sky was so incredibly clear and it glowed with color.

I like to imagine that the island is its own planet with the moon revolves around it instead of the earth.  At night, when it is peaceful and there are no people watching, I really do feel in another world.

Kurt came over and sang me songs as we both cooked scrambled eggs with ham and cheese over the fire pit.  We only had the moonlight and the lantern to aid our vision, but we made the most delicious eggs I have ever eaten.

As you know, I have been in Europe for a few weeks and I just got back last weekend.  I love trying new foods all of the time, but I actually began to crave typical American camping food like hotdogs and s’mores.  So, I invited one of my best friends, Brennan, onto the island and we had a feast.

Cooking over the small grill was perfect for two people.  The hotdogs were cooked just right and I toasted the most delectable melty marshmallow of my life.  I look forward to cooking like this every day this summer.
